How to make High Fiber Pancakes | Allergen Free Pancakes | Gluten Free Pancakes | Dark Chocolate Banana Vegan Pancakes | Chocolate Chip Pancakes | Healthy Pancakes


NO GUILT High Fiber, Allergen Free, Vegan, Chocolate Chip, Banana Pancakes!

This recipe is PROOF that you don’t have to give up the foods you once enjoyed in order to be Healthy, Happy, Vegan and/or Allergen Free!!

I came up with this recipe last Sunday after a full week of training hard for my Marathon coming up. I was craving some carbohydrates to re-fuel and pancakes sounded fantastic for breakfast! However, like everything I cook, I wanted them to be some of the healthiest darn pancakes I could possibly make. And since pancakes in general are not the typical “health food” I had to get creative to make them worth the effort and not ruin my week of hard work over an unhealthy treat. I managed to make some of the best tasting healthy, Vegan and Allergen Free pancakes that I’ve ever had! Please enjoy and play around with the recipe to find what suits you and your taste buds best!


High Fiber, Allergen Free, Vegan, Choc. Chip, Banana Pancakes!

90% Organic Ingredients, Free of Gluten, Wheat, Dairy, Soy, Egg, Nuts and Processed Sugars.

Contains: Coconut


-1 cup Organic Gluten Free/Allergen FREE Flour Mix

(Use a baking mix that has BROWN RICE FLOUR as it’s main ingredient for more nutrient content and fiber. Over the years I’ve come up with my own personal flour mix that works best for me and I no longer use any brand name mixes, if you’re curious of what the ingredients are let me know.)

-1 1/2 Tbsp. Allergen Free/Aluminum Free baking powder

-1/2 cup Organic Ground Flax Seed

-1/2 cup Organic Black Chia Seeds

-Dash of Sea Salt, no more than 1/4-1/2 Tsp.

-1/4 cup Organic Allergen Free/Vegan Chocolate Chips OR 1/3 Bar of Organic/Vegan/Allergen Free Dark Chocolate, chopped

-1 Organic banana, chopped, frozen or not

-1 cup Organic Coconut, Hemp, Rice OR Almond Milk. Do not use SOY!

-7 to 10 drops Organic Liquid Stevia Sweetener OR 2 Tbsp. Organic Agave.

-1 1/2 Tbsp. Organic Extra Virgin Coconut Oil, liquefied.

Note on Liquefying Coconut Oil, It was hot enough in my house for the Coconut Oil to be liquid when I used it. Avoid microwaves at all cost and to soften also avoid direct heat, this can cause oils to turn into Trans fats if over heated past smoke point. I set mine in the sun if needed. And it’s hot enough in Colorado to do this right now without concern for time. Or you can place the amount you need in a glass bowl and place it into a sink semi full of hot water to surround the bowl.


Mix all Dry ingredients and Liquid Ingredients separately first, then combine them and mix well. Add Choc. Chips and Banana chunks last and fold in by hand.

Pan Fry or use Pancake Skillet on Low heat with small amounts of Organic Coconut oil or Organic Extra Virgin Olive Oil if needed so they don’t stick.

Note: Batter will be thicker than typical runny pancake batter.

Spoon out pancake batter and cook one side and FLIP when the edges start to cook to a light brown, this batter doesn’t bubble in the center like typical pancake batter, but it holds together better than typical runny batter so it makes it easier to flip.

These pancakes will be fluffy yet dense. And it only takes a few to fill you up with all the amazing fiber content they have!

These puppies DON’T need any syrup! They taste fantastic on their own or with Fresh Organic Fruit. I used Strawberries since I was out of fresh banana’s. I think next time I’ll use some fresh banana slices and a dash of Organic Cinnamon or Sprinkle of Allergen free dark cacao powder as a topper.
