Healthy Homemade Peanut Butter Cups

Allergen free, Raw-Vegan, Organic Cacao and Almond Butter Cups

I am on a mission to make healthy alternatives to all of my husbands’ favorite sweet tooth treats. And peanut butter cups are a major weakness for him. I have successfully mastered a delicious and nutritious recipe to make them at home in less than 15 minutes! I recently served them at a family gathering; everyone enjoyed them and was amazed at how simple and delicious they were.

Before we get started here is a little food for thought. I am a firm believer that knowledge is key! And I like to share WHY these alternatives are better for your health and most often your wallet too.

These tasty beauties contain vitamins and minerals, fiber, antioxidants and healthy fats from the Super food ingredients of 100% Raw Organic CACAO, homemade raw organic almond butter, raw organic agave, raw organic extra virgin coconut oil and organic cinnamon. To save money, purchase CACAO nibs, Coconut Oil and Almonds in bulk and then you can use them for TONS of different recipes.

Store Bought Peanut Butter Cups contain unhealthy ingredients, bad hydrogenated fats, absolutely NO nutrients, artificial and chemical flavorings, preservatives, GMO’s, wax, high fructose corn syrup, fake addictive sweeteners, heat refined and over processed chocolate/COCOA, high calories and more….

Here is the difference between CACAO and COCOA

CACAO: Raw chocolate super food, high in antioxidants, aids in weight LOSS, promotes healthy skin, enhances mood, contains essential vitamins and minerals, improves brain function, quells headache. Promotes heart health and is a natural aphrodisiac.

COCOA: In processed store bought chocolate bars, candy bars and baking/cooking powders. Very low levels of CACAO, processed, heat refined, stripped of nutrients, often contains milk fat, hydrogenated unhealthy oils/fats, artificial flavorings, chemical flavorings, contributes to weight GAIN, contains high amounts of added wax and preservatives.

Free of Gluten, Wheat, Dairy, Soy, Eggs, Corn, Peanuts, Animal Products, Yeast, High Fructose Corn Syrup

Contains: Almonds and Coconut

INGREDIENTS AND DIRECTIONS:

This recipe will make around 12 small cups or 6 large silicone cups, give or take. I used 3 large silicone tree cups and 6 smaller paper cups. These puppies come out RICH! So smaller cups may be the best way to go, although they are delicious, less is more to avoid a sweet tooth food coma.

-1 CUP RAW ORGANIC CACAO NIBS

-1/4 CUP ORGANIC RAW ALMOND MILK

-1/6-1/4 CUP RAW ORGANIC AGAVE

-2-3 TBSP. RAW ORGANIC EXTRA VIRGIN COCONUT OIL

(Gently warmed until liquefied)

-1/2 CUP RAW ORGANIC HOMEMADE ALMOND BUTTER

-1-2 DASHES ORGANIC CINNAMON

-LARGE MIXING BOWL

-FOOD PROCESSOR

-SPATULA and WHISK

-SILICONE BAKING CUPS OR CUPCAKE CUPS

1.      Grind 1 cup of organic raw CACAO nibs in food processor for 5-6 minutes until a thick paste is formed, it will feel slightly grainy. Stop and scrape down sides with spatula occasionally if they get stuck.

2.      Scoop CACAO paste into bowl, slowly add raw organic Almond Milk and Agave and dash of organic cinnamon while mixing by hand with a whisk.

NOTE: Mix items in slowly for desired consistency AND taste test while mixing for desired sweetness. Add more or less to your liking.

3.      Add liquefied raw organic extra virgin Coconut Oil and mix into CACAO mixture.

NOTE: To liquefy coconut oil, place in a stainless steel bowl and submerge base in sink of hot water or place on a candle warmer. Do not microwave or place on stovetop, high temperatures and microwave heat will kill all nutrients and denature the healthy oil.

4.      In silicone or paper cupcake cups pour a small amount of CACAO mixture to cover the bottom.

5.      Scoop 1-2 tsp. of raw organic Almond Butter into each cup.

Optional: Stir in a small amount of raw organic Agave and liquefied coconut oil to Almond Butter prior to scooping into cups. Agave is for added sweetness, if desired. Coconut oil will help the Almond Butter solidify in freezer. However, these are not necessary.

6.      Pour in more CACAO mixture to cover Almond Butter.

7.      Place in freezer on a level surface or tray for at least 1 hour or until solid.

8.      Once solid remove cups and enjoy right away! They will start to melt if they are left out to long.
